What's for supper? Oh, there’s not much. I suppose we’ll have to have eggs.

Said in a voice of apology. But there is nothing to apologise for. The egg, one of the most common items in our kitchens and found in cuisines all over the world, is actually a marvel beyond our reckoning. It is strong, beautiful, versatile.

It symbolises the beginning of life and it represents perhaps the most elegant piece of packaging in all of nature...
