Christmas is just around the corner, and it wouldn’t be Christmas without some home-made mince pies.
Traditional, delicious, and simple to make using Jus-Rol Ready Rolled Shortcrust Pastry, Sharon Hearne Smith has two quick recipes sure to impress friends and family this festive season.
First up, are the Mince Pie Stars - perfect to enjoy with a cup of tea, festive sherry or with a little brandy cream, custard or ice-cream as a dessert offering.
When making your mince pie stars, Sharon says;
‘’Ensure to stamp out the pastry discs and stars as close together as possible to maximise the pastry’’.
These are also ideal for those unexpected visitors as; ‘’they can be assembled up to a couple of days in advance and kept in the fridge until ready to bake fresh.’’
And, if you’re looking for a festive dish with a fun twist, Jus-Rol also has some Mince Pie Pops, which look great on display for those Christmas parties and a fun one for the kids to enjoy.

Recipe one;
Mince Pie Stars Recipe
Ingredients
- 1 x 320g Jus-Rol™ Shortcrust pastry ready rolled sheet
- 225g mincemeat
- 1 small egg, beaten
- 1 tsp caster sugar for sprinkling
- icing sugar for dusting, optional
Equipment required
- Rolling Pin
- 8cm round cookie cutter
- Star shaped cookie cutter
- patty tin
- Teaspoon
- Pastry Brush
Method
- Preheat oven to 200°C (180°C for fan assisted)/400°F/Gas 6.)
- Unroll the pastry and using the round cookie cutter, stamp out 10 discs. Stamp out 10 stars from the remaining pastry.
- Line a patty tin with the round discs and divide the mincemeat evenly between them. Top each with a pastry star. Brush the stars with the beaten egg and sprinkle lightly with caster sugar.
- Bake for 12 -15 minutes until pastry golden brown.
- Remove and leave to cool a little before carefully removing from the tin.
- Serve warm or at room temperature and sprinkled with a little icing sugar if liked.
TIP Embellish the mincemeat flavour by adding freshly grated orange zest and / or a splash of whiskey or brandy (for adults only!), finely chopped roasted hazelnuts, dried or fresh cranberries and even fresh or dried chilli!

Recipe two;
Mince Pie Pops Recipe
Ingredients
- 1 x 320g Jus-Rol™ Shortcrust pastry ready rolled sheet
- 100g mincemeat
- 25g Chocolate Chunks
- 1 Egg, beaten
- 1tsp caster sugar
- icing sugar for dusting, optional
Equipment required
- 7cm cookie cutter
- Baking Sheet
- Star shaped cookie cutter
- 7 Rolled paper lolly sticks (suitable for baking)
Method
- Preheat your oven to 180 C (160°C for fan assisted ovens) Gas Mark 4
- Using a 7cm cookie cutter cut the pastry into 14 circles.
- Place half of the circles onto a lined baking sheet and brush with beaten egg.
- Place a lolly stick in the centre of the circles and press it lightly into the pastry.
- Combine the chocolate chunks and mincemeat and divide the mixture between the centres of the pastry circles.
- Using a star shaped cutter, stamp out the centre of the remaining circles and place the disc on top of the bases.
- Press the edges to seal and brush the tops with egg and sprinkle with caster sugar. You can arrange the stars on the tray to bake separately also, brushing and sprinkling them too.
- Bake for 15 minutes in the oven until golden and crisp.
- Leave to cool completely before holding upright on their sticks. Serve dusted with a little icing sugar if liked.
Top serving tip;
‘’Present the pie pops standing upright in a tall glass, small vase or jar. Fill the vessel with sugar, crumpled paper, or sisal (from a florist) to help the pops stand upright if necessary’’.
