Baked Hake with tomato,herb and pine nut dressing


4 hake steaks

Olive oil

2 small onions finely chopped

50g92ozs) pine nuts roasted

1 teaspoon pesto

6 tomatoes peeled deseeded and chopped

Juice lemon

Tablespoon mixed herbs chopped

200ml white wine



Preheat oven to 200 F

Put an Oven to Table dish in oven to heat

Fry onions in oil until soft

Add all ingredients except fish

Mix well

Place fish steaks in hot dish

Pour over onion mixture

Bake until fish is cooked - about 8 minutes

Serve with good green salad and lovely fresh boiled potatoes
