A former archbishop's home restored to new levels of luxury, a contemporary fine-dining restaurant that overlooks the Peace Bridge in Derry and a foodie enclave in Wicklow are the three new additions to the prestigious collection of country houses, historic hotels and restaurants.
Cashel Palace Hotel, Browns Bonds Hill and The Wicklow Escape are the newest destinations to grace Ireland's Blue Book, which now covers 59 properties, and are sure to be coveted staycation hideaways.

One of the most highly anticipated openings in recent years, and recently hat-tipped by Condé Nast Traveller in its guide to the top 22 destinations for 2022, Cashel Palace Hotel is destined to be a five-star hotel and promises a "world-class spa, exceptional dining and a convivial Guinness Bar". B&B rates are starting from €300.
The grand building dates from the 1730s and was once an archbishop's home. Acquired by John Magnier of Coolmore Stud before the pandemic, the spot has undergone years of renovations and is located near the county landmark, the Rock of Cashel.
Worlds away from there in history, if not in luxury, The Wicklow Escape is another new addition to the Blue Book, a former yoga retreat that has been transformed into a foodie haven headed up by Michelin star chef Danni Barry.

The 18th-century mountain lodge that houses it is a sight itself, restored by owner Lisa Wilkinson and featuring seven rustic garden rooms and two-day, all-inclusive rates from €492 for two. It will focus on extremely local produce and producers, and offer an immersive culinary experience where the menu is drawn as much as possible from the gardens.
And if that wasn't enough to take your fancy, there's a bubbling hot tub under the stars, the opportunity for breakfast in bed, guided forest walks and views of the Wicklow Mountains.
Finally, Browns Bonds Hill rounds out the three new additions, the fine-dining restaurant led by Ian Orr. Located right beside the River Foyle in Derry and overlooking the city's Peace Bridge, the restaurant was first opened in 2009 and have since crafted a number of Michelin-suggested menus.
