Serves: 6, as a starter

  • 1/2 honeydew melon
  • ¼ small red onion
  • 1tsp sugar
  • 50ml white or red wine vinegar
  • olive oil
  • 8 slices Parma ham, torn into bite-size pieces
  • 1 ball of mozzarella or burrata
  • 150g mixed salad leaves


Mix the sugar and vinegar together.

Cut the onion into very thin slices. Place the onion slices into the vinegar and stir gently to coat. Set aside for at least 10 minutes.

Cut the melon in half and remove the seeds and outer skin. Cut into bite size pieces. 

To assemble the salad drain the vinegar from the onions, it will be tinged pink from the onion. Mix it with two tablespoons of oil, and season with salt and black pepper. Use this to dress the leaves.

Pile the dressed leaves on to a big serving platter or individual plates. Scatter with torn mozzarella, melon, onion and the parma ham. Season with a final grind of black pepper and serve immediately.
