A healthy lunch from Operation Transformation.
- 50g spinach
- 10 olives
- ¼ red onion, sliced
- 5 cherry tomatoes
- 8 slices cucumber
- 40g feta cheese (cubed - e.g. 7 1cm cubes)
- Balsamic vinegar
- Olive oil
- 1 piece crisp bread
- Place vegetables and cheese in a bowl and toss
- Combine balsamic vinegar and olive oil and pour over salad
- Toss to coat all ingredients (except the crispbread) in dressing
- Serve with crispbread on the side.
