A healthy lunch from Operation Transformation.

Ingredients

Serves: 1    

  • 50g spinach
  • 10 olives
  • ¼ red onion, sliced
  • 5 cherry tomatoes
  • 8 slices cucumber
  • 40g feta cheese (cubed - e.g. 7 1cm cubes)
  • Balsamic vinegar
  • Olive oil
  • 1 piece crisp bread

Method

  1. Place vegetables and cheese in a bowl and toss
  2. Combine balsamic vinegar and olive oil and pour over salad
  3. Toss to coat all ingredients (except the crispbread) in dressing
  4. Serve with crispbread on the side.
