Operation Transformation have given us a delicious and healthy breakfast idea with this Mediterranean Breakfast Pitta!

  • 1 small round whole wheat pita
  • 30 washed spinach
  • 30g light cream cheese
  • 1 sliced tomato
  • 1 boiled egg

Method

  1. Place egg in a pot of boiling water and boil egg for 3 - 6 minutes
  2. Once cooked, remove from pot carefully and slice
  3. Place pita in a toaster and toast as desired.
  4. Carefully remove from toaster and slice open when cool 
  5. Pita may be hot so be careful doing this
  6. Spread light cream cheese in the pita and layer with spinach, sliced tomato and boiled egg and serve.
