  • 150ml water 
  • 200g tinned chickpeas, drained 
  • 1 sprig rosemary 
  • 30 ml extra virgin olive oil 
  • 2 cloves of garlic, thinly sliced
  • ¼ tsp chilli flakes 
  • ½ white onion, diced small
  • 10 cherry tomatoes, halved
  • 40g rocket
  • 160g orecchiette pasta
  • 30g parmesan or pecorino romano cheese, or extra as required


  1. In a small saucepan, add the 150ml water, the chickpeas, rosemary and cook over a low heat for about 5-7 minutes. Remove the sprig of rosemary.
  2. In a large frying pan, heat 15ml of olive oil and add the sliced garlic. Cook until the garlic just starts to brown. Add in the onion and cook over a low heat until tender and translucent. Add the chilli flakes, chickpeas and the chickpea liquid and cook until the chickpea liquid is reduced by 1/2 and some of the chickpeas are broken down. Towards the end of the cooking, add in the cherry tomatoes and continue to cook until they soften. 
  3. Bring a large saucepan of salted water to the boil – add 1 tablespoon of salt for every 4 litres of water. Cook the orecchiette until tender but still with a bite. Drain, reserving some of the pasta water. Add the pasta to the pan with the chickpeas, along with a good dash of pasta water. Continue cooking until the sauce has thickened and is sticking to the pasta. Toss in the rocket, half the cheese and the remaining olive oil. 
  4. Serve in bowls and garnish with a little more parmesan or pecorino.
