Red Chilli and Coriander Butter

Make a delicious spicey, herbed butter.


  • 125 g unsalted butter (softened)
  • 15 g chopped fresh coriander
  • 3 spring onions (thinly sliced)
  • 2 garlic cloves (finely chopped)
  • ¼ red chilli (or to taste, finely chopped)
  • dash of lime juice
  • pinch of grated lime zest
  • salt, to taste


  1. Mix the butter with the coriander, spring onions, garlic, chilli, lime juice and zest.
  2. Season to taste. Shape into a roll, cover with clingfilm, and chill.
