Renowned chef Kevin Dundon was on hand at the Ploughing Championships where he talked us through his very busy schedule. Fresh from his RTÉ show Modern Irish Food, which was "a hugely successful show", Kevin is bringing his expertise back for his new show.
We're in pre-production for our new TV show, which is great. Modern Irish Food, which was a hugely successful show, the new show is called Modern Irish Food 2, which is really good. I was just in Boston, just got back in yesterday, I was at Boston Food and Wine Festival, where ... I was hosting a food and wine festival so that was great fun.
Kevin has been very busy recently travelling around the world bringing Irish food wherever he goes.
"Two weeks ago I was at the Milwaukee Irish Fest - 120,000 people went to this festival over three days".
But before he heads "off to Orlando for the restaurant on Saturday", he filled us in on his favourite product at the moment that he is showcasing at the Ploughing:
"We’re going to be doing a masterclass on our new pork, Hampshire pork. This is a breed that originated out of America, brought to the UK, it’s been the best eating pork on the market. We’ve a farmer in Cavan, that’s actually now producing that pork for us. When you taste it, the quality is really in depth, it’s like pork that you’ve never tasted in your life before. The crackling is amazing on it. The flavour’s good ... we’re cooking it medium rare, medium, and I’ve been working on it for the last six months, and I've fallen in love with the product, it’s really really good".
