A benefit cookbook, the total proceeds of this second volume of dishes from the southeast and beyond go to Wexford Area Lifeboats. And what makes 'A Taste of Wexford 2' even more of a joy to savour is that the book was compiled by the Fifth Year students of Ramsgrange Community School in New Ross - makes you wonder what exactly you were doing at age 17.

Chefs from 16 businesses in the region are joined by guest chefs Derry Clarke and Neven Maguire to create menus and recipes for every occasion - fish lovers will be in paradise, but there is something here for every aficionado.

Roast Hake wrapped in Parma Ham (Derry Clarke)
