Terry McCoy is the Chef/Proprietor of The Redbank Restaurant in Skerries, Co Dublin. He founded it in 1983 and since then it has won many awards for fine dining including the prestigious 'Egon Ronay Seafood Restaurant of the Year'. Terry is a member of Eurotoques, The European body of chefs dedicated the highest standards of excellence in food and professional cooking and Terry has represented Ireland at many international competitions.
Terry is a keen supporter of local produce and uses local suppliers whenever possible. The mainstay of his menu is the finish fresh seafood bought from local fishermen in the nearby Skerries harbour.
