Kevin Thornton Guest Critic
Kevin Thornton has long been regarded as one of the best chefs in the country. He is the chef/proprietor of one of only 4 Michelin-starred restaurants in Ireland, and this year he received the much-coveted, Veuve Clicquot ‘Chef of the Year’ award from Food and Wine Magazine.
Kevin’s restaurant is ‘Thornton’s’ on St Stephen’s Green. Kevin and his wife Muriel opened their first restaurant ’The Wine Epergne’ in Rathmines in 1989. Then in 1995, they opended ‘Thorntons’ in Portobello and in 2002, they moved the restaurant to its current location.
Kevin recently re-vamped the restaurant, and in an effort to bring good food to more customers, he included a ‘Canapé Bar’ alongside his fine-dining restaurant.
Kevin has always been interested in food. When growing up in Tipperary, he worked in the vegetable gardens at the Cashel Palace Hotel. Later, Kevin worked at an abbattoir and in various vineyards in Europe. It was while travelling through Europe that he gained much of his cooking influences, such as using good quality regional produce and cooking with the seasons.
