Dylan McGrath, Guest Critic
Dylan McGrath is head chef at the Michelin-starred restaurant ‘Mint’ in Ranelagh. Dylan is a driven and passionate professional when it comes to food and pursuing excellence in his work.
Dylan was born in Dublin in 1977 and lived in Carlow until the age of six, when he moved with his family to the Falls Road in Belfast. After school, Dylan studied at Portrush Catering College and the Belfast Institute.
Dylan’s first job was with Jury's Inn, Belfast, and he then worked at Roscoff’s, which at the time was Northern Ireland's only Michelin-starred restaurant. He then joined Conrad Gallagher's Peacock Alley Restaurant before heading to the UK where he began working at John Burton Race's two-star Michelin restaurant, L'Ortolan's, in Reading.
In July of 2002 Dylan returned home to Dublin to work with an old friend, Aidan Byrne, at the Michelin-starred, Commons Restaurant, where he stayed until the following March. It wasn't long before he went back to London to work with Tom Aiken, in his new restaurant in Chelsea.Dylan returned to Ireland in May 2006 to take up the position of Head Chef in Mint where he achieved a Michelin star in January 2008.
