Joe Duffy is best known for his work on radio. As the presenter of Liveline on RTE Radio 1, he listens to the nation every day and has become one of the most influential media players in Ireland.
Joe enjoys cooking at home and favours preparations that are "labour-light".
He's a great fan of marinating before cooking.
"I like the idea of the food working when I'm not", says Joe.
He's also a great Francophile, holidaying with his family every year in France.
On his way home from holiday Joe likes to stock up on cans of foie gras and enjoys this fried up in a little butter - (Indeed, this is one of the starter dishes on Joe's menu in The Restaurant).
When it comes to red wine Joe again prefers French labels, his favourites being St. Emilion and Corbiéres, although he has plumped for a hefty Mexican red for his wine list today.
Joe Duffy is a good listener but how will he take the advice of our chef team?
Will his menu stand up to scrutiny? Once the critics have eaten his food, will they want to "talk to Joe"? Find out in The Restaurant.
