Paul Rankin, Guest Critic
Paul Rankin's restaurant Roscoff was the first chef to win a Michelin Star in Northern Ireland. Since then Paul has gone on to achieve TV fame appearing on TV shows such as Ready, Steady Cook, Food Poker and Step up to the Plate. Paul also runs a successful restaurant business, The Rankin Group, in his native Belfast - which includes his Belfast restaurant Cayenne and numerous Café Paul Rankin's.
While Paul has been a guest critic at the 'The Restaurant' many times, but this is his first time judging a cook off, and he had something to say about chefs and the criticism that they get and how they should take it.
'I think all chefs can have their confidence knocked now and then. I think that's probably what keeps you on your toes as well, and perhaps separates the men from the boys. It's also important to take any criticism you get with a pinch of salt because its important to have your own convictions of what good food is. I mean, you might be deluded, but chances are if you're passionate about food and if you have your own conviction, you'll find your way. That is your personality on that food and that's what makes someone really special.
