Ross Lewis opened Chapter One Restaurant in Parnell Square in Dublin in 1991. Head chef Ross and his team at Chapter One were awarded their first Michelin star in 2007.
Despite the location of his restaurant in the heart of Ireland's capital city, Ross is actually from the Rebel County of Cork. After he graduated from University College Cork, he travelled extensively, working in the food industry in New York, London and Switzerland in restaurants such as 'Peter Langan's', 'Odins' and the Michelin starred 'Chat Botte Restaurant' at the Beau Rivage Hotel in Geneva. Eventually, his desire to open his own restaurant brought him back to Ireland where he became immersed in Ireland's burgeoning food culture.
Ross is a great believer in using local artisan produced ingredients and organic produce in his restaurant. He also promotes these causes through his membership of the 'Taste Council of Ireland' and as one of 'Eurotoques Ireland' 's commisioners. This is his third visit to The Restaurant.
