TASTING NOTES: An arresting and powerful bouquet of wild and gamy scents mingled with redcurrants and rooted with an earthiness the French might call terroir. The palate is equally intriguing. Ripe tannins give easy access to the raspberry, strawberry and black cherry fruit evolving into liquorice and wood spice with smoky tones from aging in French oak casks. Serve with stir-fried strips of venison with French beans and snippets of smoked bacon and a splash of the wine.
