Chris Hill Gets A Little Bit Fishy With His Wines

Friday, 2 November 2007

Chris Hill shares his expertise on the best wines to CATCH with your fish

Generally fish and white meat go well with white wines because the balance and intensity of flavours work well together.  However some light fruity red wines can work well

Light reds like Beaujalais, Fleurie, Young reds from Spain (we'll taste one) and light Italian wines

Yes, if you are eating something with more powerful flavours it can be paired with a bigger red such as a Burgundy or a Bordeaux or a new world cabernet.  Meals that have smoked fish or a pepper sauce or fish with a meaty texture and flavour like Monkfish or Tuna.
