Winemaking details: The grapes were hand harvested, de-stemmed and cold macerated. Fermentation then proceeded for between 12 to 15 days, with some lots being fermented with selected yeasts and other with indigenous stains. Malolactic fermentation was undertaken with the wine in contact with oak; a mixture of chips, staves and barrels. The wine was then lightly fined and bottled.
Regional info: The vineyards for this wine are found in the Valle de Tulum, framed by Cerro Pie de Palo, in Caucete, San Juan Province, Argentina. Average height is 630 meters above sea level, with annual mean temperature of 17 degrees centigrade, annual rainfall below200 mm and alluvial soils. The valley's weather and land make the wine in the region intense and fruity.
