Quick and easy snacks
Tortilla chips
and guacamole
SERVES 6 - 8
8 wheat or corn tortillas, each cut
into 8 wedges
¼ teaspoon cayenne pepper
(optional)
25g (1oz) parmesan cheese, grated
(optional)
Sea salt
Heat up a deep fryer full of oil.
When the oil is hot drop in the
tortilla wedges and deep fry until
pale golden brown. Meanwhile, mix
the cayenne with the grated
cheese, if using. Take the tortillas
out of the oil, and while they're still
wet with oil, sprinkle over the
cheese and cayenne or just sprinkle
over some sea salt. Delicious on
their own or dipped into
Guacamole, Tomato Salsa or Red
Onion Raita, or Sweet Chilli Sauce
and creme fraîche.
