Quick and easy snacks

Rodeo wraps

MAKES 4 WRAPS

For days after I have made a big pot of chilli, I make these wraps for a quick lunch or a supper in front of the television, and I don't always heat up the chilli. These alone are worth making the chilli for.


4 wheat flour tortillas
2 tablespoons crème fraîche, seasoned with salt, pepper and 2 teaspoons lime or lemon juice
8 tablespoons grated cheddar cheese
2 tablespoons chopped coriander
250ml (9 fl.oz) Chilli con Carne heated up if you like
4 handfuls (aprox. 75g/2¾oz) thinly sliced cos or romaine lettuce (optional)


Place a tortilla on the work surface and spread with ½ tablespoon seasoned crème fraîche. Sprinkle over 2 tablespoons grated cheddar and ½ tablespoon chopped coriander, then place about 3 tablespoons of chilli con carne and 3 tablespoons sliced lettuce in a vertical line. Roll up and cut in half at an angle; that way it looks good on a plate. If you want to eat this on the run, fold up the bottom of the tortilla before you roll it, that way the filling won't fall out of the bottom of the wrap.
