Hearty winter dinners

Roast South East Asian Salmon

SERVES ABOUT 10

This is such a great main course for a big dinner party or family gathering. This recipe can be doubled easily; two fillets of salmon will fit happily on a baking tray


1 Filled (side) of Salmon

For the sauce:

100ml Fish Sauce
100ml White Wine
1 Clove Garlic
2 tsp finely grated ginger
1 tbsp brown sugar (25g)
Juice of 1 Lime
2 tbsp fresh coriander, chopped


Mix the fish sauce, white wine, garlic, ginger and brown sugar for the sauce and boil uncovered for about 4 minutes or until slightly thickened. Pour half of the over fish and cook in the oven for 20 mints. When the fish is cooked, remove if from the oven and transfer to a serving plate. Add the juice of 1 lime and 2 tablespoons of chopped coriander to the remaining sauce and spoon over the hot salmon and serve with noodles or rice.

NOTE:

This is also delicious served at room temperature with salads.
