Delicious sweet treats

Apple fudge cake

SERVES 10

My sister-in-law, Penny, makes this cake. It's perfect as a dessert or with a cup of tea or coffee. Sooooo good.


2 large cooking apples, such as Bramleys
50g (1˝oz) dark brown sugar
CAKE BATTER:
175g (6oz) butter
175g (6oz) light brown sugar
175g (6oz) self-raising flour
4 eggs
FUDGE SAUCE:
110g (4oz) butter
110g (4oz) light brown sugar
1 tablespoon lemon juice
You will also need a 25cm (10in) sauté pan or a springform tin.


Preheat the oven to 180°C/350°F/gas 4. Butter the sides of the tin and line the base with a disc of greaseproof paper. Peel and cut the apples into eights and arrange in a single layer in the tin (this will be the top of the cake when it's cooked). Sprinkle over the 50g (2oz) dark brown sugar.
