His ambition/dream would be to open a ten table bistro at the foot of the Victorian Alps in Australia that is always full and uses local produce and wines to bring smiles to its’ patrons faces!
He got into the audition stage with his first dish of tomato-based curry with smoked paprika chilli, coriander, ground cumin, chilli, blended ginger, garlic and onions potatoes and peas, accompanied by homemade chapatti, pure mint raita and white vinegar, chilli, red onion and fennel salad.
