Fresh from the Sea : Programme 2

Clodagh McKenna continues her journey around Ireland's coast, this week in Co Cork, where she joins Ger Lynch of Westpoint Shellfish Farm in Roaring Water Bay. Cork has always been renowned for producing fantastic mussels and Ger's farm is no exception, being one of the first in the country to be awarded the BIM 'Eco-Standard' for mussel production. Ger explains to Clodagh how the mussels are grown and just how exacting the standards are to ensure a consistently top class mussel is grown.

Clodagh's next stop is the Roaring Water Marine boatyard, owned by brothers Liam and Martin Whooley where she learns how their fibreglass punts are built before going for a spin in one of them.

Sean and Ollie O'Driscoll are brothers whose fish stalls in various farmers' markets in Munster are famous both for the great value fish on offer, and for the lightning-fast fish-filleting the boys perform in front of their customers. They show Clodagh how to fillet and skin a variety of fish, and there's a slow-motion action replay for those who miss it first time around!

Clodagh's final destination is O'Connor's Seafood Restaurant in Bantry where she joins head chef Gemma Hunt in the kitchen to see two popular mussel dishes created: mussels with stout and garlic mussels.
