Today The Happy Pear will be serving up our Debt Busting Dinner! Each Wednesday we will be cooking cheap and healthy meals which fill the hole in your tummy without leaving a hole in your purse! Today The Happy Pear are making a delicious Mexican chilli!

The chilli cost E4.95! But with the addition of the Funky yellow rice this comes in at E6.52 in total! So Richie came in a fraction cheaper at E5.85 last week but we're doing well!!
Mexican Leek and Black Bean Chilli
Serves 4
Ingredients:
- 1 red onion chopped finely - 15 cent
- 4 cloves of garlic chopped finely - 15 cent
- 1 teaspoon Cumin seed - 10 cent
- 1/2 gound or fresh Chilli - 10 cent
- 1 teaspoon of Ground coriander - 10 cent
- 1/4 teaspoon of Smoked paprika - 10 cent
- 1/2 teaspoon of Ground cumin- 10 cent
- 2 medium leeks washed and chopped finely - 80 cents
- 1 red pepper slice lengthwise finely - 80 cent
- 2 cans chopped tomatoes - €1.20
- 1 can black beans - drained and rinsed - 80 cent
- 2 teaspoon of Salt - 10 cent
- Pinch of Black pepper - 5 cent
- 1&1/2 teaspoons of Honey - 30 cent
- Juice of half a lime - 15 cent
Method:
1. Get a big pot and fry onion and garlic at medium heat for 5 mins in a little oil stirring regularly to ensure they don't burn.
2. Add the leeks, peppers, chili, cumin seed and salt and fry for a further 5 minutes.
3. Then add the ground coriander, ground cumin and smoked paprika, black beans and chopped tomatoes add the pepper and honey - turn up heat to high until starts to boil.
4. Once boiling turn down hear to low and leave simmer for a further 10 mins.
5. Taste and further season before enjoy!

Top tips
- Serve with sour cream and coriander for a richer dish.
- Use all the leek as the green bit is the most nutritious.
Funky yellow rice
Ingredients:
- 2 cups of Basmati brown rice - 1 euro
- 3 cloves of Garlic chopped finely - 10 cent
- 2 teaspoon of Turmeric powder - 10 cent
- 1 teaspoon of Cumin seeds - 10 cent
- 1/2 a Chilli chopped finely optional - 10 cent
- Pinch of salt - 2 cent
- 1/2 a Lime sliced into segments - 15 cent
- 4 cups of water
Method:
1. Fry the garlic; cumin seed and chilli at a high heat for 2 mins until the garlic starts to brown make sure to stir frequently.
2. Turn heat to medium and add the rice, lime, salt and fry for another minute.
3. Add the water and turmeric and turn the heat up high and bring to the boil.
4. Once boiling turn down and leave simmer until the water has boiled off.

Top tip:
Add or subtract different spices to customise to your taste.
Zingy Tomato Salsa
Ingredients
- Tomatoes - 1 can of chopped tinned - 60 cent
- 1/2 ground or fresh Chilli chopped finely - 10 cent
- 1 teaspoon of Cumin - 10 cent
- 2 scallions stalks - 40 cent
- 1 small tin of corn drained - 65 cent
- 2 cloves of garlic chopped finely Garlic - 15 cent
- Juice of 1 Lime - 18 cent
- 1 teaspoon Honey - 10 cent
- 1 teaspoon salt - 5 cent
- 1/2 teaspoon of pepper - 2 cent
- Handful of fresh Coriander/ flat parsley to serve - 50 cent
Method:
1. Put all ingredients into a bowl, mix well before serving, enjoy!
Cost: E3.25 euro
Top tips
- Serve with corn chips as a nice dip!
Mixed Bean salad
- 1 can of Mixed beans - drained - 80 cent
- 1 Lime juiced - 25 cent
- 1 Chilli deseeded and chopped finely optional - 10 cent
- 1 teaspoon Ground cumin - 10 cent
- 4 tablespoons of olive oil - 45 cent
- Handful of Cherry tomatoes quartered - 60 cent
- Handful of fresh Coriander -chopped finely- 60 cent
- 2 Scallion stalks - 25 cent
- 1 teaspoon of Salt - 5 cent
- 1 pinch of black pepper - 2 cent
Method:
Put all ingredients in a bowl and mix well - enjoy!

- Put some sun dried tomato pesto to really funk it up
