A benefit cookbook, the total proceeds of this second volume of dishes from the southeast and beyond go to Wexford Area Lifeboats. And what makes 'A Taste of Wexford 2' even more of a joy to savour is that the book was compiled by the Fifth Year students of Ramsgrange Community School in New Ross - makes you wonder what exactly you were doing at age 17.

Chefs from 16 businesses in the region are joined by guest chefs Derry Clarke and Neven Maguire to create menus and recipes for every occasion - fish lovers will be in paradise, but there is something here for every aficionado.

Among the seafood dishes are:
Thai-style Scallop Salad (Phelim Byrne)
Seared Fillet of Sea-Bass (Pallas Foods)
Roast Hake wrapped in Parma Ham (Derry Clarke)
Baked Lobster (Aldridge Lodge)
Kilmore Quay Crab and Watercress Spring Roll (Kevin Dundon) Fillet of John Dory (Dominque Dayot)
Wexford Mussels (Mange 2).

For those who prefer their meals much less aquatic, the temptations are as plentiful:
Homemade Potato and Smoky Bacon Soup  (Glendine Country House)
Curried Chicken Spring Rolls with Mango Salsa (Neven Maguire) Oven Cooked Gnocchi with Fresh Ricotta and Spinach (Enoteca D'Alba)
Medallions of Pork Fillet with Red Thai Curry (Heavens Above) Wild Mushroom Risotto (La Dolce Vita)
Seared Duck Breast with Indian Spiced Potatoes (The Yard) 
Pan-Fired Fillet of Dry Aged Beef, Mushroom and Onion Confit (Warren Gillen)

If there's still room for dessert your sweet tooth will thank you but your waistline may not:
Chocolate Fondue with Strawberry, Marshmallows and Cookies (La Marine)
Enniscorthy Rhubarb and Mascarpone Fool with Ginger Syrup (Reeds at Ferrycarrig)
Wexford Strawberry Eton Mess (Sqigl)
Bread and Butter Pudding with a Twist of Apricot and Orange (The Shelburne)

Included with every menu is a wine suggestion for each course and sample dinner menus for every eatery, in case you are in the area. Having made some of them, getting more of them served up to you seems like a holiday to be planned.
