Indian Recipes :

Chicken Korma with Almonds:

5 cloves garlic, chopped
2.5 cm root ginger chopped
50g flaked almonds
5 tbsp sunflower oil
2 bay leaves
4 cardamon pods, seeds only
4 cloves
1 cinnamon stick
1 medium onion, chopped
1 tbsp ground cumin
1 tbsp ground coriander
? tsp cayenne pepper
1 tbsp tomato puree
1.2kg  (approx 6 breasts) chicken breasts, skinned and cut into portions
Or 1.5 kg chicken pieces (on the bone) skinned and cut into portions
1 tsp salt
2 tbsp cream
? tsp garam masala
150ml water
Rice, to serve

Method:
1 In a blender put in the garlic, ginger and almonds. Add 500ml of water and blend to a smooth paste
2 In a large pan heat the oil.  When it is really hot carefully put in the bay leaves, cardamom pods, cloves and cinnamon stick, and stir for about 10 seconds.
3 Then add in the onion and cook until starting to brown.
4 Reduce the heat to medium and add the paste from the blender along with the cumin, coriander and cayenne pepper.  Stir for 3-4 minutes.  Then add in the tomato puree, stir well and cook for another minute.
5 Add the chicken pieces, salt, cream, garam masala and water.
6 Bring to a simmer then cover the pan, turn the heat to low and simmer gently for 25 minutes (20 minutes is fine if using chicken breast pieces, otherwise if the chicken is on the bone cook for longer) or until the chicken is cooked.
7 Serve with rice.
 

Aloo Gobi (Potato and Caulifower)Serves 4 to 6

2 TBLS Ghee or coconut oil
1 large onion, sliced
2 cloves garlic, crushed
1 tbls turmeric
2 tsp garam masala
2 tsp ground cumin
6 cardamom pods, bruised
4 cloves
800g potatoes, peeled and quartered
8 curry leaves
125ml water
400 ml can coconut milk
1 tsp salt
1 small cauliflower, divided into florets
1 cup frozen peas
Optional garnish; desiccated coconut 

Method
1. Leave out peas to defrost
2. Heat ghee or oil in a pan and fry the onion and garlic until browned.
3. Add all the spices and fry until fragrant and popping.
4. Add the potatoes, curry leaves, water, coconut milk and salt to the pan
5. Cover and simmer for about 15 minutes until the potatoes are tender
6. Add the cauliflower and simmer for a further 10 minutes, covered.
7. Stir in the peas and heat through
8. Optional: garnish with desiccated coconut

 

Indian Spiced Squash

1 medium butternut squash (or pumpkin), about 1 kg of flesh, cut into chunks
150 ml water
4 tsp tumeric
1 bayleaf
1 tsp sugar
Salt
50g/2oz butter
2 tbsp oil
1 onion, chopped
? tsp cumin seeds
? tsp coriander seeds
2 cloves garlic, chopped finely
Small piece of fresh ginger, grated
1-2 green chillies, de-seeded and chopped
Handful of fresh coriander leaves

Method
1. Put the squash in a saucepan together with the water, tumeric, bayleaf, sugar, and salt. Bring to the boil, cover and simmer gently until the squash is very tender (for approx. 15-20 minutes depending on the size of the squash chunks). Do not drain.
2. Just before serving, reheat the squash mixture. In a small saucepan heat the butter and oil and fry the onion until golden. Raise the heat and add the cumin and coriander seeds and sizzle for about 20 seconds. Add the garlic, ginger and chilli and cook for another minute or so.
3. Mash the squash slightly, transfer to a warm serving dish and pour over the hot butter mixture.
4. Stir lightly to mix, then scatter with coriander leaves and serve.

 

Dhal with Brinjal (Aubergine)

400g chana dhal
2 tbls ghee or coconut oil
1 medium brown onion, finely chopped
1 clove garlic, crushed
2 tsp ground cumin
? tsp cumin seeds
1 tbls tomato puree
1 litre water
500ml vegetable stock
1 large tomato, roughly chopped
6 baby brinjal (baby aubergines), cut into chunks
1 tbls tamarind juice made from 1 tsp of tamarind paste

Method
1. Soak lentils for an hour then rinse very well in cold water.
2. Cover 1 teaspoon of tamarind paste with 50ml of boiling water. Leave for 5 minutes, strain and reserve 1 tablespoon of liquid.
3. Heal oil or ghee in a large pan. Fry onion, garlic, ground cumin, cumin seeds and paste, stirring for 5 minutes. If it starts to burn add a little water, which will evaporate.
4. Add lentils, water, tamarind juice and stock. Bring to the boil. Reduce heat and simmer, uncovered for about 40 minutes, stirring occasionally.
5. Add tomato and brinjal, simmer, uncovered for about 20 minutes until brinjal is tender, stirring.
6. Serve with chapatti or rice.

SUSHI AT ICE
Michael Brough, Executive Sous Chef at the Four Seasons ICE bar, came into studio to demonstrate sushi-making for Pat.
Sushi will be served in the Sunroom, ICE bar, Four Seasons Hotel Tues - Sat from 5pm to 10pm. No reservations necessary

Michael's recipes for CALIFORNIA ROLL:

 
First prepare a batch of Sushi Rice:

450g/1 lb Japanese Sushi Rice (1 cup of rice and 1 cup of water  will make 3 rolls at 6 pieces each.
30mls sushi vinegar

1. Check the volume of the rice and measure an equal quantity of water (the ratio is always 1 cup of rice to 1 cup of water). Wash the rice twice, then mix with the water.

2. Put in a rice cooker for 25 minutes.

3. When rice is cooked, mix it with the Sushi vinegar (the Sushi Vinegar should be roughly one third of the rice/water mix), stirring continuously, then leave to cool for 5 minutes before use.
 
Make the California Roll (California Maki)
Makes 6 individual pieces: to use all rice, multiply ingredients below by 3 - i.e. 2 julienne avocado or 6 julienne avocado

Ingredients:
2 julienne avocado,
2 julienne cucumber
2 julienne crab sticks 
1 handful cooked Sushi Rice (see above for method of cooking)
1 tablespoon sesame seeds
1 tablespoon of mayonnaise in a squeezable container (to garnish only)

You will also need:
Half a sheet of Nori (roasted seaweed) - this comes in a big sheet which you cut in half
1 bamboo mat - wrap with cling film to prevent the rice from sticking to it

1. Peel the avocado and remove the centre stone, then cut the avocado, cucumber and crab sticks into julienne (thin sticks)

2. Spread out a half sized piece of roasted seaweed on the bamboo mat.

3. Spread rice thinly on top of the seaweed and bamboo mat - cover all the seaweed in rice

4. Sprinkle 1 tablespoon of sesame seeds on top of the rice

5. Turn over the layer of rice on the bamboo mat so the Seaweed is facing up

6. Line up 1 julienne of crabsticks, 1 julienne of avocado and 1 julienne of cucumber in the centre and squeeze a line of mayonnaise along this.

7. Lift the edge of the bamboo mat, and roll it tightly until all the ingredients and rice are covered

8. To serve: using a very sharp knife, cut the roll in half in the centre, and then cut each side into three pieces.

Suzi and John Gorman talked to Pat about their twin boys, Fraser and Jacob, who very soon after birth  became seriously sick with a rare genetic illness, and sadly did not survive.  The babies were flown to Sweden and treated at the Karolinksa Hospital  under Dr. Kenneth Palmer , where there is an ECMO Machine - Extra Corporal Membrane Oxygenation.  Suzi and John are now fundraising for the ECMO Unit in Sweden.  If people would like to send some money for this Unit they can send it to Today With Pat Kenny, Radio Centre, RTE, Donnybrook, Dublin 4. Christmas Canapes

Smoked salmon Irish style:
450g sliced smoked salmon.
Potato Cakes
450g freshly cooked mashed potatoes
55gs butter
pinch of salt and pepper
lemon wedges
dill

small tub of creme fraiche or soured cream

Melt the butter and add to the hot mashed potato. season with salt and pepper.

Sprinkle on the flour and work mixture into a dough.

Roll out in a circular shape on a floured surface. Cut into rounds using a scone cutter.

Cook on a lightly oiled pan or griddle until brown.

Spoon a little créme fraiche or soured cream on each potato cake and arrange a generous slice of smoked salmon on top.

Garnish with lemon wedges and sprigs of dill or parsley.

Chopped fresh pumpkin
200ml white wine
1 sprig of rosemary
600ml chicken stock
200ml of cream

Avocado purée with cauliflower milk and jelly
I poached quail egg
1 Avocado
100ml water
juice of one lemon

I head of Cauliflower chopped up. Cover with milk and cook. Once it is in a puree add two leaves of gelatin to every 500mls of pureé.
