If you end up with leftover herbs, finely chop them and divide them in ice cube trays with a little olive oil. Add to soups or risottos to finish. My big tip on this front is to grow your own. It is incredibly easy to do even in small spaces. Salad leaves and herbs are at their freshest picked from the garden.
