Martin Shanahan's Alternative to Sunday Roast
Baked fillet of hake (ingredients):
- Large fillet of hake
- Mix of vegetables: Carrots, leeks, spring onions, broccoli, semi-sundried tomatoes, black olives, fresh herbs, parsley, chervil, coriander, one whole sliced lemon, salt and pepper and a quarter cup of olive oil.
Place the hake in tin toil and place the mixed vegetables on top. Season with salt and pepper. Drizzle with olive oil. Make an envelope out of the tinfoil and cook for twenty minutes.
