Margaret Browne's Fruit Soda Cake
Fruit Soda Cake
Ingredients:
- 450g plain flour
- level teaspoon baking soda
- Pinch of salt
- 2 teaspoons caster sugar
- 75g sultanas
- 400mls buttermilk
- If making it for little Women's Christmas put in 3 grains of rice as well
- 900g loaf tin (greased)
Method:
- Preheat oven 190c/375F/Gas mark 5
- Mix all the dry ingredients together
- Make a well in centre slowly add in the milk mixing all the time to form a dough
- Knead lightly
- Put into tin
- Bake for about 35/40 minutes
- It should sound hollow when tapped on the bottom
- Serve with butter and home made jam
