Margaret Browne's Colcannon
Margaret Browne told us how her father had a wonderful poem about colcannon which he always recited after a few drinks.
It went like:
Did you ever ate Colcannon
when it was made with yellow cream
And the kale and praties blended
like a picture in a dream
Did you ever scoop a hole on top
to hold the melting lake
of the clover flavoured butter
Your mother used to make
Ingredients:
- 450g of green cabbage or kale
- 900g floury potatoes (Queens or Roosters)
- 3 spring onions finely chopped
- A decent knob of butter
- 120 mls milk
- A pinch of grated nutmeg
- salt and pepper to taste
Method
- Cook the potatoes until tender
- Peel and mash
- Cook cabbage
- Cook the spring onions in milk
- Add the butter to melt
- Pour mixture into a jug
- Then mash all the ingredients together
- Add nutmeg season to taste
- Yum Yum!
