Margaret Browne's Colcannon

Margaret Browne told us how her father had a wonderful poem about colcannon which he always recited after a few drinks. It went like:

Did you ever ate Colcannon
when it was made with yellow cream
And the kale and praties blended
like a picture in a dream
Did you ever scoop a hole on top
to hold the melting lake
of the clover flavoured butter
Your mother used to make




Ingredients:
  • 450g of green cabbage or kale
  • 900g floury potatoes (Queens or Roosters)
  • 3 spring onions finely chopped
  • A decent knob of butter
  • 120 mls milk
  • A pinch of grated nutmeg
  • salt and pepper to taste

Method
  • Cook the potatoes until tender
  • Peel and mash
  • Cook cabbage
  • Cook the spring onions in milk
  • Add the butter to melt
  • Pour mixture into a jug
  • Then mash all the ingredients together
  • Add nutmeg season to taste
  • Yum Yum!
