Fresh Prawns Tossed In Flavoured Oil

Ingredients
20 prawns, raw, with shell on
Garlic flavoured oil
˝ chili
1 lemon
Clove of garlic
Decent salad dressing of your choice

Method
  • Place prawns in bowl with oil chopped clove of garlic and juice and zest of lemon
  • Toss together and leave to marinade
  • Thread prawns through light skewer 3 or 4 on each
  • Cook on BBQ or grill for 2 minutes on each side
  • Serve the prawns with salad dressing in dipping bowl
Burgers With A Twist
Add chopped corainder and chopped mushrooms to burger mix

Yummy Spare Ribs
It is good to marinade and precook spare ribs in oven for a few hours beforehand

Zesty Chicken With Coconut Sauce

Ingredients
5 skewers of chicken pieces from butcher
Can of coconut oil
Mint leaves, chopped
Tablespoon of lemongrass chopped
1 red chilli
Zest and juice of lime
1 tablespoon soft brown sugar

Method
  • Place all the above ingredients, except the chicken, in a saucepan and cook for 5 minutes
  • Pour some over the chicken and serve the remainder in a bowl beside the chicken
Our Favourite Red Pepper And Lime Salad

Ingredients
2 red peppers, thinly sliced
2 yellow peppers, thinly sliced
1 green pepper, thinly sliced
4 ripe tomatoes, sliced in rings
3 tablespoons of fresh chopped coriander
Juice of a lime
Zest of a lime
A few drops of Tabasco sauce
A tablespoon of honey

Method
  • Place the peppers and tomatoes in a bowl
  • Then place the lime juice, tabasco, honey, chopped coriander and honey in the bowl
  • Whisk
  • Pour over the peppers and tomatoes
Sweet Potato With A Yoghurt Dressing

Ingredients
10 sweet potatoes chopped into cubes
˝ teaspoon of coriander powder
˝ teaspoon of cumin powder
Cooking oil
Salt and pepper
Basil leaves
2 cartons of Greek yoghurt
Zest of lemon
Tin foil for wrapping

Method
Place cubed potatoes into a bowl
Toss in oil and spices, season with salt and pepper
Place in a double layer of tin foil
Cook on the BBQ for about 1 hour
Open foil and serve with yoghurt on top
