1Kg cauliflower florets
350g Butternut squash, diced
100g Leeks, sliced
100g Celery, chopped
2000ml Vegetable stock
2 Bay leaves
1. In a large pot bring the stock to the boil.
2. Place all vegetables and bay leaves in pot.
3. Bring to the boil and simmer for 10-15 minutes or until vegetables are tender
4. Remove bay leaves.
5. Blend the soup in a food processor or with a hand blender.
