Neven's Pork Meatballs in Corriander

Neven's Pork Meatballs in Corriander

 

Pork Meatballs with Coriander and Coconut Milk

 

Ingredients

 Serves 6
750g lean minced pork
1 onion, very finely chopped
1 egg, lightly beaten
50g breadcrumbs
1 red chilli, deseeded and finely chopped
1 teasp. garam masala
6cm piece fresh ginger, peeled and finely chopped
4 tablesp. fresh coriander, chopped
Salt and freshly-ground black pepper
1 tablesp rapeseed oil
2 tablesp. curry paste
200g fresh tomatoes, chopped
200ml coconut milk
1 tablesp. lemon juice

Method

 

Heat the oven to Gas Mark 7, 220°C (425°F).

 

Put the mince, onion, egg, breadcrumbs, chilli, garam masala, half the ginger and half the coriander in a bowl. Season with a little salt and black pepper. Mix well then shape into small balls – approximately 4cm in diameter. Put the meatballs in a large roasting tin and drizzle over the oil. Toss gently. Place in the oven and cook until golden, about 15 minutes.

 

While the meatballs are cooking make the sauce. Heat a frying pan and add the curry paste and remaining ginger. Cook for a minutes, stirring all the time. Then add the tomatoes and continue to cook for 2-3 minutes. Add the coconut milk and bring to the boil. Reduce the heat and leave to simmer for 5 minutes.

 

Pour the sauce over the meatballs, mix well. Return them to the oven and cook for another 20 minutes. Just before serving stir in the lemon juice and scatter over the remaining coriander and the almonds. Serve with steamed rice and lightly toasted almonds.

Marty. My gardening tip is to collect as many seeds as possible from your garden or others, ready for 
spring sowing. And marty the Magnificent Seven is the soundtrack to my youth in one channel land. Fabulous .

My tip is get someone in to do the gardening and go for a good long walk.!

Marty. Always use the water that you have boiled eggs in to water your house plants. They'll do exceptionally well. Try it. 

Thursday 6th October

if you have a flowering dogwood shrub or shrubs (cornus) don't be tempted to prune. just now. leave them flourish and enjoy the light coloured floaty leaves adding colour and light to 
the garden...closer to December prune hard cutting long lengths of the vivid red branches..these branches are bendy and flexible (like your joints after using voltorol!) perfect for weaving into a 
circular shape..weaving the lengths into a plaited wreath add other bits painted pine cones ribbon ivy holly etc makes a perfect seasonal decoration or gift! will dry out but can be used for years.


Friday 7th October

Marty. My gardening tip is to gather up all those fallen leaves into a black bag {or two} Sprinkle on some water, and tie it securely. Put it in a corner out of sight, and every few weeks shake the bags and turn over. This time next year open the bags and spread the Leaf mould compost on your garden!
