• 400 g tin of chickpeas
  • juice of ½ a lemon
  • 1 shallot, peeled and roughly chopped
  • 1 clove garlic
  • olive oil to blend
  • salt and ground black pepper


  • Put the chickpeas, lemon juice, shallot and garlic in a food processor and blitz until you have a smoothish paste. Add the olive oil gradually, until the paste is soft and spoon able. Season to taste.
