• 2 chicken breasts
  • 2 eggs beaten
  • 1 tblsp milk
  • 200 g kelkin gluten free cornflakes (crushed, around 1 teacup)


  • Mix the egg and milk together in a shallow dish.
  • In another shallow dish spread out the crushed gluten free cornflakes.
  • Firstly dip the chicken into the egg mix and then coat with the cornflakes.
  • The fillets can then be fried using a little spray olive oil.
  • Serve with some roast vegetables.
