Ingredients

  • 3 cloves of garlic (minced)
  • a thumb sized piece of ginger (grated)
  • 1 tblsp oyster sauce
  • 2 tblsp soy sauce
  • 1 tblsp honey
  • 2 turkey breasts (sliced into thin strips)
  • 100 g of rice vermicelli noodles
  • 2 tblsp sunflower oil
  • 2 red peppers (finely sliced)
  • 1 broccoli (finely sliced)
  • 1 red onion (finely sliced)
  • 1 tsp sesame oil
  • a good handful of bean sprouts

Method

  • Soak the noodles in a bowl of boiling water for 6 minutes or until soft. Drain and set aside.
  • Mix the turkey with soy sauce, oyster sauce and honey.
  • Heat a wok over a high heat and add the oil to coat. Stir-fry the turkey for 2min then take it out of the wok.
  • Stir-fry garlic, ginger and onion for 2 minutes, then add the turkey and stir-fry for another 3-4 minutes.
  • Add the broccoli and peppers, and stir fry for another 4 minutes.
  • Add the noodles and bean sprouts and a drop of sesame oil to taste. Toss everything together using kitchen tongs until it’s combined.
  • Serve straight away.
