• 540 g plain flour, sifted
  • 45 g caster sugar
  • 250 ml olive oil
  • 100 ml white wine
  • 1 tsp salt
  • 2 eggs (lightly beaten)


  • Mix the flour, sugar and salt together, slowly adding in the eggs, oil and wine, beating all the time.
  • Turn out onto a floured board and knead it for 3 minutes.
  • You can leave this in the fridge, if necessary, but it's important to bring it to room temperature before you roll it out, add your topping and bake it.
