Ingredients

  • for the ribs:
  • 4 sheets of baby back ribs or regular pork ribs
  • 1 cup water
  • 1 bay leaf
  • 1 red chilli cut in half
  • 1 cup mirepoix roughly chopped (onion, carrot, celery)
  • 1 tsp salt
  • 1 tsp pepper
  • for the barbeque sauce:
  • 3 cup ketchup (heinz)
  • 1 cup molasses or treacle
  • 1/2 cup diced onion
  • 1/4 cup chopped garlic
  • 1 tsp ground cumin
  • 1/4 cup light soy sauce
  • 1/2 cup dark brown sugar
  • 1/4 cup worchester sauce
  • 2 tblsp cider vinegar
  • 2 tblsp hot sauce
  • 2 tblsp prepared mustard
  • 1tbls olive oil

Method

  • In a sauce pot add the oil and heat, add the onions and garlic.
  • Sautee till translucent.
  • Add all the ingredients from the top and simmer for 20 minutes constantly stirring.
  • Take off heat and season with salt and pepper to taste.
