Red Chilli and Coriander Butter
- 125 g unsalted butter (softened)
- 15 g chopped fresh coriander
- 3 spring onions (thinly sliced)
- 2 garlic cloves (finely chopped)
- ¼ red chilli (or to taste, finely chopped)
- dash of lime juice
- pinch of grated lime zest
- salt, to taste
- Mix the butter with the coriander, spring onions, garlic, chilli, lime juice and zest.
- Season to taste. Shape into a roll, cover with clingfilm, and chill.
