Ingredients

  • 100 g roquefort
  • 150 g softened unsalted butter
  • 1 tblsp chopped fresh parsley
  • freshly ground black pepper

Method

  • Whizz all the ingredients in a blender or food processor, then scrape out onto a piece of foil.
  • Shape into a log and roll up in the foil, then chill until required.
  • Variation: Roquefort and Green Peppercorn Butter – simply stir 1 tablespoon crushed green peppercorns into the Roquefort butter.
