Ingredients

  • 4 herrings
  • 75 g coarse oatmeal
  • sea salt and black pepper
  • 50 g butter (mixed with 1 tablespoon olive oil)

Method

  • Clean and gut the herrings.
  • Mix the oatmeal with plenty of sea salt and black pepper, coat the herrings with this mixture.
  • Melt the bacon fat in a pan and fry the herrings until they are crisp and brown.
  • Serve with lemon wedges and garnish with parsley.
