Steamed Apple Pudding with Homemade Custard

From: Corrigan Cooks Naturally

You can use 250ml of double cream and 125ml milk. We, however, used 375ml of whole milk from a local farm, so it was deliciously creamy.

Dark chocolate raspberry brownies

This recipe makes the most gooey, decadent chocolate brownies imaginable. A word to the lads: if you have annoyed your missus, a tray of these will go a long way to patching things up. With chocolate as the mortar. The frozen raspberries work brilliantly as they stay whole during the baking process, adding bursts of pink tartness in the slab of chocolatey goodness.

Whoopie Pies

From: Kitchen Hero: Great Food for Less

During my search for the perfect whoopee pie, I was sent this recipe by a reader of my blog, whose mother in law, Mrs Linda Daunt, has lived all her life in Maine, New England and is a fantastic cook. Mrs Daunt's special touch is to add buttermilk instead of regular milk, to give the pies a richer taste. The original recipe uses a marshmallow-type filling, but I prefer to stick with regular buttercream frostings.

Oh so good Cheesy Veggie Savoury Muffins!

These are something special for breakfast or lunch, and you can pack them with lots of veg (they are also great for using up leftover cooked veg) and any cheese you want. If you are a meat eater, slice up some cooked meat and pop it in, if you like blue cheese pop a chunk in the centre, dress them up with your favourite seeds or pack them with fresh herbs and garlic!

Apple and Carrot Muffins

Shop-bought muffins are a bugbear of mine, full of sugar and very high calorie! They are really cake without the icing. Definitely not a good breakfast option or a lunchbox filler! These muffins get a fibre boost from apples, carrots and oats, all good sources of healthy carbohydrates too! The recipe uses natural sweeteners like apple, raisins and nutmeg and less sugar. Ideal for breakfast or as a lunchbox treat.
