Quick and easy humus from Patrick Ryan.
- 400 g tin of chickpeas
- juice of ½ a lemon
- 1 shallot, peeled and roughly chopped
- 1 clove garlic
- olive oil to blend
- salt and ground black pepper
- Put the chickpeas, lemon juice, shallot and garlic in a food processor and blitz until you have a smoothish paste. Add the olive oil gradually, until the paste is soft and spoon able. Season to taste.
