Chef Paul Flynn has teamed up with Lidl to create the perfect platter of party food for the festive season.


  • Hot feta cheese, cucumber jam and mint:
  • 2 packets eridanous feta cheese
  • 1/2 cucumber.. peeled and grated
  • 2 tblsp sugar
  • i tbsp vinegar
  • 2 tblsp flour
  • 4 tblsp primadonna extra virgin olive oil
  • a pinch of salt for the cucumber
  • some fresh mint
  • salt and pepper for the flour
  • Crayfish, sour cream and basil:
  • 1 tub of crayfish
  • 1 tblsp sour cream
  • 1 tblsp fresh basil pesto
  • Hummus and sun dried tomato:
  • 1 tub of hummus
  • 1 tub sun dried tomato
  • Creamy goats cheese, parma ham and rocket:
  • 1 pkt of parma ham slices
  • 1 tub of soft french goats cheese
  • 1 pkt rocket


  • Hot feta cheese, cucumber jam and mint:
  • For the cucumber jam: Sprinkle the grated cucumber with the salt and mix well, let it sit for 20 minutes, this will help take out the excess water from the cucumber and concentrate the flavour.
  • Rinse the cucumber under cold water to wash off the excess salt and put into a pot.. Add the sugar and vinegar and cook on a gentle heat until the cucumber becomes thick and jammy. Allow to cool.
  • Drain the feta and cut each piece into 4 squares
  • Put the flour onto a plate, season and mix. Dredge the feta cheese in the flour and pat the excess off
  • Heat the olive oil in a pan and fry the cheese for a minute or two on each side until golden and crispy.. You may need to do this in batches
  • Serve straight away with a little Cucumber Jam and a little Fresh Mint on top.
  • Toasted baguette:
  • Set your oven to 190deg (170 deg fan, gas mark 5)
  • Cut your Baguette into thin Rounds , Place on a Baking tray and drizzle a little olive oil over each piece of bread.
  • Sprinkle with salt and pepper and place in the oven for approx 12 minutes until golden and crispy.C
  • Crayfish, Sour Cream and Basil:
  • Mix everything together, season and spoon onto the toast
  • Hummus and Sun Dried Tomato:
  • Put a little blob of hummus on the toast and top with a little tomato.. Delicious!
  • Creamy Goats Cheese,Parma Ham and Rocket:
  • Smear the cheese on the toast
  • Tear the ham into little pieces
  • Scrunch it up and place it on the toast
  • Top off with a leaf of Rocket and serve
