Mackerel with beans on toast

A simple and tasty dish as seen on the Today Show

Ingredients


  • 8 mackerel fillets
  • 250 g tin of baked beans
  • 4 slices of toast
  • 1 onion finely diced
  • 2 rashers finely diced
  • 1 courgette finely diced
  • pinch of curry powder
  • little bit of rocket
  • 1 lime

Method

  1. For the sauce:
  2. Sweat off the bacon and onions
  3. Add the courgettes and cook for 2 – 3 mins
  4. Add baked beans and bring to the boil
  5. For the Mackerel:
  6. Season with salt and pepper
  7. Pan fry in a very hot pan
  8. Fry skin side down for @ 3 mins
  9. Turn over and cook for 2 mins
  10. Toast your bread
  11. Spoon your beans on top
  12. Garnish with a sprig of Rocket and a wedge of lime on the side.
