Asian, French and Herb Dressings

Incredibly easy, giving maximum taste, these will have you wondering why you didn't make your own salad dressing before.

Ingredients


  • For the Asian Dressing
  • 3 tblsp sunflower oil
  • 1 tblsp dark soy sauce
  • 2 garlic cloves
  • 2 tsp honey
  • 1 thumb-sized piece of ginger, peeled and finely chopped or grated
  • Juice of 1 lime
  • For the French Mustard Dressing
  • 1 garlic clove, peeled and finely chopped
  • 1 tsp Dijon mustard
  • 1 tblsp white wine vinegar
  • 1 tblsp lemon juice
  • 3 tblsp extra virgin olive oil
  • A generous pinch of sea salt and freshly ground black pepper
  • For the Herby Balsamic Dressing
  • 1 garlic clove, peeled and finely chopped
  • 1 tsp honey
  • A good handful each of fresh rosemary, thyme and basil, finely chopped, plus a couple of large rosemary sprigs
  • 1 tblsp balsamic vinegar
  • 3 tblsp extra virgin olive oil
  • A generous pinch of sea salt and freshly ground black pepper

Method

  1. For each dressing, simply whisk the ingredients together, or to make them ahead of time, pop the ingredients in a clean jar. Screw on the lid and shake well to combine.
