  • 40 ml dark rum
  • 20 ml over proof rum
  • 30 ml lime juice
  • 10 ml demerera sugar syrup
  • 120 ml fresh pineapple juice
  • 1 dash angostura bitters
  • 1 whole passionfruit
  • shake hard with ice
  • take a tall glass, add ice and single strain, garnish with fresh fruit


  • Shake all the above ingredients hard with ice for a minute.
  • Take a tall glass, add ice and single strain. Garnish with fresh passionfruit.
